Corn bread recipe.......
2C corn meal mix
1.5 C self rising flour
1-2 egg(s)
dashes of salt, pepper, and sugar or splenda
buttermilk
vegetable or olive oil
cast iron skilletMix the meal, flour, splenda, salt and pepper together. Next add the egg(s). Add buttermilk until the mixture is like cake batter. Pour into the preheated skillet with the oil. (only use enough to coat the skillet not float the mixture)
Place the skillet and mixture in a preheated oven at 425* bake until crispy on sides and golden brown on top.
(If you want to be very brave or different, you can add a can of corn and chopped peppers to the mixture for something different.)
No I haven't found a corn bread from corn recipe yet, but I may just wander into the kitchen one day and scare one up. If you know of one please let me know or write an article about it, and post it to one of the food groups. And i will too!
